Chocolate Linzer Cookies

For this year's annual V-Day treat, I decided to go back to the basics with heart-shaped cookies. 

Not just any heart-shaped cookies, but chocolate Linzer cookies. If you have been around here for a while, this is the third type of Linzer cookie I have made although none of them have been particularly traditional. Maybe someday, but for now, I am perfectly happy making untraditional renditions of this Austrian favorite. 

These came about because I was trying to use up some leftover jam I canned and made last year. If I recall correctly, it was a mix of strawberry and rhubarb on the crux of spring turning into summer. I was afraid the texture would be all wrong but it was actually perfect for these cookies. Jams that are too loose or wet make these cookies messier and more difficult to handle and assemble. I found that using a jam that is more firm and thicker is easier for Linzer cookies. The jam acts as a kind of glue that binds the top and bottom cookie together.

Chocolate and Almond Sandwich Cookies

The original name for these cookies is "Romeo's Sighs and Juliet's Kisses" which if you ask me, is not really indicative of the type of cookies these are so I decided to rename them.

It is so much less romantic than the thought of Romeo's "Sighs" and Juliet's "Kisses" sealed together with a sweet filling. Sadly, even the romantic in me couldn't help but cringe at the name.

But, these are Valentine's Day appropriate so their romantic value is not completely lost by my unwillingness to call them by their original name.

S'mores Bars

S'mores Bars

I'm generally not one for super sweet and trashed up desserts but I can definitely get behind these Smore's Bars.

Of my limited camping and smore's making experience, I'm always torn between just eating the roasted marshmallows and actually eating smore's. I have issues with actual smore's because sometimes the chocolate doesn't melt all the way through and you really don't know that until you take a bite. And then, there's the whole burnt marshmallow versus golden brown and delicious marshmallow debacle. More often than not, I'll just rotate between the two depending on my mood. When I get sick of marshmallows and smore's, all I want to do is roast the marshmallows because it's mainly an excuse to play with fire.  

These bars on the other hand are wannabe smore's, sadly without the fire, but taste even better in my opinion.
