Another summer, another year to roast the heck out of shishito peppers. 

Since my first introduction to these funny little peppers, I can't help but roast pints of them when they are in season. Usually I opt for some variation of this super simple method, and this year is no exception—they are best simply charred with a little bit of sea salt. 

So why not top them on pizza? 1 in 10 of these peppers has a bit of a fire, although for the most recent basket I bought it was more like 1 in 3. As a person who is still working on being comfortable with spicy foods, I'll eat them like chips until I get a particularly spicy one. Luckily, the fire from shishito peppers quickly fades away. This spice lends a similar kick to topping your pizza with crushed red pepper flakes but with more of a fresh pepper taste.

Simple Roasted Shishito Peppers

Hello...just a quick pop in with a super easy summer recipe. 

I haven't posted in a while because I've either been traveling or clearing out all of the leftovers in my freezer because it's been too hot to cook. Also read, lazy. 

This also means that I have been neglecting the fact that all of this amazing summer produce is out and that I need to consume as much as possible before it disappears. Granted, I do live in sunny California where certain things are available year round but produce at its peak is the best.

Ricotta Toasts + 3 Toppings

Sometimes I gravitate towards certain foods and I will repeatedly eat them for weeks on end.

There was a length of time when my lunch of choice was ricotta cheese and roasted red peppers wrapped in a tortilla; part wrap and part burrito. It was easy, required very few ingredients and was perfect when my school schedule was tight. Those were the days when I'd work from 9am - 1pm, bike quickly back to my apartment even though it always took 15 minutes, take Gus out, throw my lunch together, and bike back towards campus. Eating lunch before class started was the way to go and that tortilla wrap satisfied my 2pm lunch cravings. 

But this is not that wrap/sandwich. In fact, I haven't had that wrap/sandwich in over a year and a half but sometimes it will pop in my head. I'll think about that fluffy ricotta with a sprinkle of salt and freshly ground pepper and the chew of the tortilla. I remember roasting those red bell peppers and setting off the smoke alarm about 3 times in a row causing the neighbors to open their screen door and glare at me through the gate that separates our apartments. Sorry, sorry for sensitive smoke alarms!
