Every few months I crave the favorite classic—spaghetti and meatballs.

Sometimes I'll make the sauce from scratch depending on what kind of jarred sauce is on sale. If I do make it myself, I will usually opt for for using canned San Marzano tomatoes but since we are in the middle of tomato season, I was hankering for something fresh and truly from scratch. 

The last time I made tomato sauce from raw tomatoes was almost exactly two (!) years ago. That was a delicious sauce but for some reason this one was even tastier. I used almost the exact same recipe, but with a few changes.

Oven Roasted Tomato Sauce

Tomato sauce is like chicken broth—one of those food things that I avoided making for a long time because the process looked too intimidating to even try.

I would go out of my way to make my own bread or macarons but tomato sauce was on a whole different spectrum of homemade.

After receiving Lidia's Favorite Recipes from Popo a few Christmases ago, I decided I would tackle tomato sauce once and for all. However, this was always with canned San Marzano tomatoes and never with fresh tomatoes. So, for several years, that's what my homemade tomato sauce was made of with the occasional jarred sauce when I was truly lazy or desperate.
