I’ll keep this one short as I know everyone is in the last-week-before-Christmas craze.

At this point in December, you might find yourself with a box of peppermint bark laying around. Maybe you have already eaten it and maybe it won’t go eaten for another few days.

When I find myself with Halloween and/or holiday candy, I usually can’t help but put it in some sort of baked good. When applicable, of course! Nothing of the gummy variety will ever find itself in any baked good of mine.

I was afraid this was going to turn into a Recipe Mishap but luckily, the third time really can be the charm. 

The mint almost spoiled these cookies which is a little nerve-wracking when one of your favorite flavor combos is mint and chocolate. Hello Mini Mint Chocolate Chip Ice Cream Sandwiches and Thin Mint Doughnuts!

I think peppermint extract does something to egg whites when you try to whip them because with the first two tries, the egg whites refused to get to the soft peak stage. At first I thought that a bit of egg yolk had gotten in the bowl so I tried again after carefully separating the eggs. But, the same thing happened the second time around which was really, really puzzling.

It's been far too long since I've shared something mint chocolate flavored or a baked doughnut.

As my most favorite flavor, a mint chocolate flavored doughnut seemed appropriate for St. Patrick's Day. I've never been a huge celebrator of March 17th aside from making corned beef, cabbage and Irish soda bread a few times, but if it's all about the green, I'll go with mint.

Chocolate Peppermint Dipped Pretzel Crisps

In other words, I found a super easy snack/treat that's perfect for the holidays.

This was the result of another trip to Costco that involved shopping for snacks that come in packages more than enough for one or two people. For some reason, I don't snack as much anymore. I used to always have a snack around 3 pm - 4 pm but now I make it through from lunch to dinner without much in between. Kristen and I got these Pretzel Crisps because we were feeling uninspired by everything else Costco had to offer. Pretzel Crisps, as they are named, are more crispy than regular pretzels but they seem to retain more salt. Perhaps this is due to more surface area or I haven't had pretzel type things in a while.

I remembered that Magdalen, my roommate through college, made some chocolate dipped Pretzel Crisps as Christmas gifts last year. I recall gobbling those right up but had since forgotten about them. That extra bit of saltiness triggered some memory that chocolate would be the cure, as it usually always is. Candy canes also seemed like an excellent addition. It was a lightbulb moment and voilà these Chocolate Peppermint Dipped Pretzel Crisps were born.
