It's funny how sometimes the simplest recipes I want to post stay in the queue for the longest time. 

I haven't been quite sure what to write for the past few weeks. Well, that's not entirely correct, I have had thoughts about it but have wondered if I'd just be rattling off about stuff that no one really cares about and are entirely unrelated to this dish. But, then I go back to the whole this-is-my-blog-and-I-can-write-about-whatever-I want-to-write thing. I am trying to not care what others think, but that is always hard. After getting distracted by 73 Questions videos, starting with this one with Daisy Ridley, I am back again with food. 

December was filled with travel and holiday craziness so I never found the chance to post a recipe over the holiday season. But, here are two catch-up posts about some things that happened at the end of 2017. My Christmas decorations are put away, holiday music playlists are moved to the bottom of my Spotify account and only one string of twinkling LED lights and two poinsettias remain.

So, here we are at the beginning of January and as I've written about before, I'm not one to diet with the new calendar year. The idea of counting calories, recording food and constantly checking on my weight makes me anxious so I generally choose to stick to my same routine of balance which means I can still have dessert at 8:45 p.m. if I eat my fruits and vegetables too.

Besides hiding from the heat, I've been doing a lot of cooking for one lately.

Cooking for one is one of those things that I don't remember how it feels like until I dive back into it for a while. It starts off with the excitement of trying something new and different. I'll peruse my bookshelf for new recipes to try or look up random ingredient combinations. I'm all about using up things in my freezer, fridge and pantry so if it includes that, extra bonus points! Then, it's a trip to the grocery store where I revel in the super high AC and talk myself out of buying too many things for one person to eat. These days, my weekends have been dedicated to cooking since it's nice to be able to heat things up during the week. Meal prep really does work!

Stuffed Shells with Spinach and Sausage

Stuffed pasta is a luxury that I hardly ever get myself into.

And now that I think about it, this is the first time I've ever made stuffed pasta! I made this at the beginning of April on a languid spring-like Thursday evening when I was feeling adventurous enough to actually try piping the filling in the shells rather than spooning it in. A word of advice: don't try piping the filling unless you are sure your sausage and spinach mixture is chopped finally enough. Mine wasn't and I ended up just being exasperated with even trying so I resorted back to a good ol' spoon.

Nachos for One

It's been a while, but I'm back to being by myself for just the summer.

Not that I don't miss having Kristen and Mags around but after coming back from a week long road trip, for an introvert like me, alone time is much needed. This also means I have returned to the art of cooking for one. I'd forgotten what a completely different game it is. Do you know how much less food you go through when you're feeding one mouth vs. two or more? Like, what is Costco? I made the mistake of going there on my return trip while trying to calculate what toppings to get for homemade nachos, after listening to this podcast and having a sudden urge for something crunchy and cheesy. 

I wandered around the store thinking of really important things like...Should I buy this bulk bag of blue corn chips or a significantly smaller bag of blue corn chips for almost the same price? Ohh, rotisserie chicken, I haven't had one of those in a while, should I get it? I am feeling pretty lazy at the moment, so yes. Honestly, what is a single person supposed to do with a huge bag of chips and a whole rotisserie chicken?
