Boston Cream Pie Cupcakes

Per the start of this blog, I made Kristen her special requested birthday dessert. 

Last year it was this cake and the year before (and first blog post!) it was this cake

But this year, instead of a full-blown layered cake, I went with cupcakes instead. I liked the idea of being able to assemble these so that they were fresh and when you wanted to eat them. With the custard inside, Boston Cream Pie is one of those things that is best eaten the day you make it and if your party is on the small side, cupcakes are a lifesaver. 

Each part can also be made ahead of time and individually assembled so that these are ready to eat right when you want them.

A cake that is chocolatey with a dense crumb, covered in a silky, smooth cream cheese frosting with the flavor of Earl rey tea and topped with cocoa powder and chocolate shavings. 

At four layers, it's as wide as it is tall. 7.5-inches to be exact. You must be willing to share because these pieces are big.

In my opinion, birthdays are the time to bust out the layer cakes, the fancy cakes, the cakes that are extraordinary and surpass everyday notions of dessert. 

When someone’s birthday is almost around the corner the question, “Hey ________, what kind of cake do you want for your birthday?”, is often a given. Or the alternative question/statement that I ask is “Hey ________, your birthday is coming up. I’ll bake you anything you like. What’ll it be?” Or sometimes, if I know the person very well, I end up baking them the dessert I know they like the best, whether or not it’s cake. I’m a people pleaser in that way.
