Tomato and Basil Frittata

Tomato and Basil Frittata

Breakfast for dinner, anyone?

Sometimes eggs don't agree with me in the morning so I am perfectly happy to eat them at a later time in the day. This time, I found that the addition of slow-roasted tomatoes helped cut down the taste and texture of the eggs and I even found myself reaching for seconds. Either that or I was really hungry post-photographing this frittata.

Pane Bianco Star Bread

Pane Bianco Star Bread

Dear King Arthur Flour, I've unintentionally accomplished two of your BakeAlong challenges in one go.

The first time I made a star-shaped bread was with a few Hapkido friends about a year and a half ago. It was at the beginning of summer when the weather was quickly turning too warm to make bread but we were determined. Straight out of the oven, it was gushing Nutella, pillowy, chocolatey and mmm, mmm, mmm. It is definitely on my list of things to remake (as soon as I clear out more sweets). But who knows, I keep telling myself that almost every week before I make something new.

Since the holidays were only a few weeks prior to when I made this at the beginning of January, I decided to go for a more savory option. As is usual in the KBC kitchen, I was of course, trying to use up something. This time it was sun-dried tomatoes which I have been meaning to incorporate into bread for a while now. As is also usual, I was running about a hundred different scenarios of how this bread could be. Would it be a pizza? Something kind of like a savory babka or other loaf-type bread? And what other accompaniments? Meat? Cheese? Herbs? etc etc... Sometimes this goes on too long so I just have to decide on something. Other times, I finally decide on something only to change my mind and go in a completely different direction.

Peach & Mozzarella Salad with Basil Vinaigrette

Peach & Mozzarella Salad with Basil Vinaigrette

Sometimes, I find Snapchat silly and obnoxious and other times, it has some useful and entertaining content such as this Basil Vinaigrette from Gaby

I will be honest, most of the time, I don't really like to eat salad. It's not like I don't like vegetables/greens (which I do!) but because I find that salads sometimes lack flavor and taste so I won't bother with them and will most likely eat roasted vegetables instead.

Let's Talk...Cashew Basil Pesto

Let's Talk...Cashew Basil Pesto

I've been trying really hard to keep my basil plant alive and well.

It would be easier to just get a bunch of basil at the grocery store but I've found that you might as well just get the plant. It's either the same price or just a bit more and doesn't result in sad wilt-y, dried, black leaves buried in the back of your fridge.

My history with basil plants has been short-lived and gloomy. Last summer I decided to get one and left it outside to grow. The first few weeks were great. I added basil to tomato sauce. I put basil leaves in my salad. But then it got covered in dust from leaf blowers, eaten to bits by aphids and ended up suffering without enough sun. And I'm pretty sure I forgot to water it way too often.

I generally have a pretty bad track record when it comes to taking care of plants. Why is it so hard to remember to water something daily?
